Though I don’t make it to Olive Garden restaurant nearly enough (about an hour away) I do love their alfredo pasta.  So, I was happy to find the recipe in an older issue of Food Network Magazine.  Because of my love for chicken we will top the alfredo with blackened chicken. (Shrimp would also work well).

You will need:

3 chicken breasts or 4 thighs (skinless, boneless)
blackened spices (recipe below)
1/ 2 lb. fettuccine pasta, uncooked
Olive Garden Alfredo sauce (recipe below)
vegetable oil for cooking

First for your blackened spices you will need:

4 T. paprika
1 T. onion powder
1 T. garlic powder
1 T. cayenne pepper
1 T. white pepper
1 T. black pepper
1 T. ground oregano
1 T. ground thyme
1 T. salt

A jar or salt shaker-style container to hold the spices.

Mix all ingredients throughly and store in jar.
